What is Undhiyu?
This is a traditional vegetarian dish of Gujarat prepared especially during winter. The dish gets its name from the Gujarati word “undhu” which means “upside down”. In the olden days, Undhiyu was cooked in an inverted clay pot buried in the ground. The dish mainly consists of mixed vegetables, spices, and methi muthia. It is usually served with puri or chapati and has a special place in any celebration.
How is Undhiyu Prepared?
To prepare this dish, vegetables like brinjal, potato, french beans, green peas, raw banana, yam, etc are diced and sauteed in oil. Next, methi muthias are prepared by adding spices like chili powder, coriander powder, turmeric, fenugreek leaves, and salt to gram flour, and a tight dough is made. Later, small balls are made of the dough and deep-fried in oil.
Next, oil is taken in oak, and finely chopped ginger, garlic, green chili paste, chopped tomatoes, spice powders, and undhiyu masala are added. After cooking for 5 minutes, the fried muthias and sauteed veggies are added and cooked on a low flame for 10-15 minutes. It is then garnished with fresh coriander leaves and served with chapati, thepla, or puri.
